Set up by Peruvian co-owner and chef Daniel Chavez, TONO Cevicheria (Tono means party in Peruvian) is as authentic as it comes. Ceviche, being the national heritage dish of Peru, is a must-order. Tonos menu offers five different versions (scallop, salmon, fish, octopus), all with leche de tigre, or tiger’s milk, a citrus-based marinade, as their base. The signature Tono Ceviche is particularly memorable with fresh line-caught fish from New Zealand married with crispy baby calamari and just a hint of chilli pepper for some hearty smoked flavours.
