This 22-seater fine dining sushi-ya has won plenty of accolades since it opened in late 2016, and rightfully so. Chef-owner Tomoo Kimura keeps a keen eye on the little details—from the 150-year-old hinoki wood sushi counter to Hokkaido spring water for cooking—that make all the difference.
At Sushi Kimura, the chef serves up deeply seasonal omakase menus that start from $120 for lunch and $280 for dinner. Alongside the premium cuts of sashimi and perfectly formed sushi, one will encounter other dishes that leave deep impressions, such as the tender abalone simmered with sake and topped with crisp shreds of seaweed, and otoro sushi gently kissed with binchotan.
Last but not least, there is also the signature rice bowl generously piled with bafun uni, toro and ikura.
