COMO Cuisine is helmed by chef Timothy de Souza, who dishes up a varied but succinct menu built on fresh seasonal ingredients. The ensuing flavours on the plate are fresh and wholesome, thanks to his light, deft touch. Take the signature swordfish sashimi, generous slices of raw swordfish lightly brushed with citrusy ponzu sauce and served with dainty dabs of buttermilk for an unexpected creamy touch and sliced chilli for a fiery hit. Another hit is the octopus, lightly grilled till tender, retaining its natural briny sweetness with minimal adornment.
