1919 Waterboat House sits in a colonial heritage building by the Singapore River. Its elegant setting oozes old world charm, with dark wood furnishings, greyish-blue accents and vintage black-and-white photographs adorning the walls. The service is warm and attentive, and the food, a good balance of classical and modern.
The appetiser of house-cured salmon and salmon tartar is a winning one, tossed with dill and crème fraiche, and flecked with chopped cucumber for fresh crunch. The cioppino or fishmans stew is brimming with mussels, octopus, prawns and scallops, all deftly cooked.
