A sprawling view across Sentosa and the sea beyond greets guests at Dusk, located on top of Mount Faber. While the hypnotic gliding of cable cars in the distance is enthralling,this is not the kind of sit-back-and-dream kind of place. Dusk is a preferred watering hole for post-work team outings, with upbeat music setting the tone. Happy hour runs till 8pm and they have a range of wines and liquors to keep spirits up.
Executive chef Kenny Yeo turns out some deliciously unique small plates, including an earthy heartwarming bowl of forest mushrooms in a rich sherry cream sauce. There is also foie gras marinated in sweet dessert wine, then seared to a crisp and served on toasted baguette slices topped with truffle balsamic pearls. The heartier of appetites should order the cote de beouf—700g of bone-in prime rib cooked sous vide to guaranteed a juicy pink centre, then given a good sear over a hot grill for that indispensable char.
Wines by the glass are affordably priced, while the cocktail menu features the nitro-frosting technique, where nitrogen is injected into a cocktail via an aerator to ensure your cocktails stay cold for longer.
