Stellar at 1-Altitude


Its location on the 62nd floor, at the top of One Raffles Place, means that those who appreciate a good view are in for a real treat. Indeed, Stellar at 1-Altitude offers an unmatched panorama of the Marina Bay area, thanks to expansive full-height glass windows.

At the table, Australian head chef Christopher Millar offers amulti-sensory exploration of modern Australian cuisine packed in an eight-course Constellations degustation menu. The gustatory journey might begin with delicate Japanese snow crab counterpointed by grape mustard, followed by langoustine tartare paired with shredded green apple, lavender sorrel and pistachio caviar. A green pea soup served in an intriguing sphere pops deliciously in the mouth to reveal a splash of stock brewed from baby back ribs.

The meal is broken by an interlude during which diners are invited to take “a trip to the garden” to taste herbs and witness chefs prepare nitrogen-poached lemon meringue. Then it is back to the table where a wild skate wing is served with confit potatoes and capers, and poached venison loin arrives on celeriac and pickled parsnip. The kitchen saves the best for last in the form of a well-marbled Josper-grilled Westholme wagyu rich with indulgent flavour. Desserts are outstandingly inventive. ‘Bacon and eggs’ take the form of a comforting pudding made from sheep’s milk yoghurt and elder flower honey, lightly dusted with bacon bits. A white peach and lychee sorbet cleanses the palate with refreshingly sweet, delicate notes.

Oenophiles will find premium wines served by the glass, including a 2010 Bordeaux Domaine de Chevalier Grand Cru and 2009 Bordeaux Chateau Poupille Atypique Cotes de Castillon.
