Helmed by celebrity chef Sam Leong, Forest森 offers contemporary Chinese cuisine in a stunning dining room designed to make guests feel like they are dining under a canopy. Pillars are fashioned like giant tree trunks and lead up to an expansive ceiling adorned with branches. A wall of greenery and the use of mood lighting complete the magical rainforest setting.
The menu focuses on quality dishes that redefine Chinese fine dining. An excellent start to a meal is the milky chicken broth double-boiled with morels and wild bamboo pith, and served in a Thai coconut shell. Rich with flavour yet delicate and light, it is a sign of the good things to come from the kitchen.
Move on to a six-head abalone baked with black truffle sauce in a salt crust and accompanied by king oyster mushrooms and seasonal vegetables. Another must-order is the very satisfying dish of wok-fried Australian beef tenderloin cubes tossed with black pepper sauce and served with a nugget of seared foie gras in yuzu soy sauce. The rich fattiness of the foie gras enhances the beef without overwhelming its natural meaty flavours.
Go for the steamed salmon fillet served with a piquant chilli tamarind coulis before rounding off the savoury delights with fragrant Japanese pearl rice crowned with mapo (hot and sour) tofu and crabmeat. Other signature seafood dishes include the Boston lobster that’s first pan-seared, then baked and served with black truffle saffron sauce, and the abalone mee sua braised with Sri Lankan crab.
Desserts here are outstanding, especially the homemade fresh coconut jello with aloe vera, sea coconut and popping candy—a favourite with regulars.
