CÉ LA VI offersan unparalleled panorama of the Marina Bay waterfront. Come sundown,as the lights come on, it truly makes for a glittering backdrop. Snag a table at the al fresco bar area for pre-dinner tipples and a chance to snap some Insta-worthy pictures before heading into the restaurant proper. Helmed by executive chef Joseph Sergentakis, the menu purveys modern Asian dishes composed with top shelf ingredients from around the world.

Expect an exotic melange of Asian influences in dishes that run the gamut from spicy salmon sushi rolls with smoked chipotle peppers to warm cured Tasmanian salmon with pickled kumquat. One of the house signatures is the ceviche comprising plump Hokkaido scallops and briny oysters tossed in a refreshingly tangy dressing of calamansi, blood orange, pomelo and belimbing. Another interesting apppetiser to fire up the appetite is the grilled Sicilian prawn and pomelo salad with toasted peanuts, dried shrimp, shallots and laced with chilli and coconut cream.

The mains selection offers plenty of variety from sea and land. Sup on the likes of slow-roasted black cod marinated in black bean sauce and grilled snapper scented with lemongrass, turmeric and kicap manis, alongside meaty options like tamarind braised short ribs and roasted Rangers Valley ribeye served with sweet potato noodles tossed in doenjang for a spicy kick. Stretch out your night with myriad desserts— from passion fruit and coconut mousse to rose and watermelon cake, or go with the market-fresh fruit selection served with chilli salt and lime.
