Sake lovers will be thrilled with the sake dispensing machine that greets diners at Sumiya Suntec City. Using a pre-paid card, diners can choose from 16 Japanese wines in tasting, half or full portions. Happily, the food hits the spot too. There is a wide selection that include sashimi, sushi, yakitori, charcoal-grilled seafood and more.

Begin with some charcoal-grilled skewers, among which the salmon belly skewer is particularly delectable, with crispy skin and flesh that melts in the mouth. The Japanese sweet potato skewer is also lovely, its supple flesh grilled to creamy sweetness. Since charcoal grilling is Sumiya’s speciality, it makes sense to order the genshiyaki, the traditional Japanese style of grilling seafood stacked vertically against smouldering coals for gentle, even cooking. The fish is flown daily from Japan and seasoned simply with sea salt. Each fish can take between 20 and 40 minutes to cook, but when it arrives at the table with silky flesh and blistered skin, you know the wait is worth it.
