In just four years since it opened, Hashida Sushi has staked its reputation as one of Singapore’s finest Japanese restaurants. Helmed by chef Kenjiro ‘Hatch’ Hashida, son of Japan’s master chef Tokio Hashida, the spotlight here is on sushi served omakase-style. Accordingly, it has drawn a well-heeled clientele of sushi connoisseurs and food lovers.
In the tradition of Japan’s finest, Hashida Sushi is intimate—there is no more than 30 diners per service. The aim is to allow the chefs to serve more than just good food, but an immersive omakase experience.
The star dish is Hashida’s signature otoro nigiri, carefully composed from a section of the tuna underbelly that is prized for its unparalleled marbling and melt-in-the-mouth texture. This is preceded by the procession of sushi—beautifully formed mounds of sushi rice topped with the likes of sea bream, Japanese barracuda, yellowtail, cuttlefish, botan prawn, and marinated bluefin tuna akami, depending on the fish in season at any given time of year.
Towards the end of the meal, guests are served a rice bowl filled with sea urchin and salmon roe—a truly exquisite melange of flavours that will stay with you long after you leave the restaurant. Should you feel extra indulgent, request for some tuna to be added. Watching the chef carefully scrape the flesh right from the tuna carcass is mesmerising and certainly adds to the anticipation of this immensely popular dish.
