Mario Batali and Nancy Silverton’s Singapore outpost is constantly packed to the gills thanks to its unfailingly solid Italian cuisine. Unless you make a reservation, you’ll be hard pressed to get a table just by walking in. Should that happen, ask if there is space by the mozzarella bar, which serves small dishes featuring handcrafted varieties of cream-filled burrata. (When in doubt, ask for the burricotta with radicchio, spiced walnuts, honey and fried rosemary.) Should you manage to snag a table, you might find yourself tempted to order everything from the antipasti menu. Whittle it down to the tripe alla parmigiana, the red endive with fennel and anchovy date dressing, and the grilled octopus tentacles with potatoes, celery and lemon. Then order a couple of mains and family-size pastas to share. The pan-roasted sea trout with Umbrian lentils and red cabbage sottocetto is divine, as is the spaghetti alla Calabrese with lemon and marinated white anchovies.
