Perched on the second floor of One Fullerton, Forlino offers some of the best views of the Marina Bay waterfront. But the main reason regulars return is for the exquisite cuisine. Guests are treated to refined Italian fare in its elegant dining room clad in a beautiful shade of powder blue.

The starters are outstanding, in particular, pan-roasted Hokkaido scallops that are plump and full of flavour; and Kagoshima wagyu A5 beef tartare. The pastas are just as divine—try the spaghetti cacio e pepe that’s showered with parmesan and pepper, and crowned with a large, umamiladen prawn. Other specialities include the Hokkaido sea urchin linguine, spaghetti with baeri caviar and clams and the panfried Italian sea bass. For dessert, tradition gets a twist with the tiramisu, which is reinterpreted with co? ee espuma foam atop layers of fluffy whipped mascarpone and coffee-infused sponge fingers.
