It can be hard to tear your gaze away from the breathtaking view of the Marina Bay area from Dolce Vita’s perch, but happily, the gastronomic temptations on offer at this popular Italian restaurant will prove well worth it. Often, the kitchen lets its fresh produce speak for itself. Try the treccia Campana di bufala, a buffalo mozzarella cheese from southern Italy made through an elaborate process of spinning, cutting and twisting the milk curd over and over, resulting in a delicate sweet taste that is light on the taste buds yet flavourful enough to whet your appetite.
From the pasta selection, the carbonara is the crowd favourite.
It combines cured Italian pancetta and the rich, aromatic flavours of pecorino sabayon tossed with black pepper spices. The tortelli, meanwhile, is made in-house and comes dressed with piquant tomato confit, succulent seared langoustine caciucco, burrata flakes and marjoram.
The meats here are pretty impressive too. The tagliata di manzo is a tantalising dish of grilled US prime beef bone-in ribeye, served tableside and complete with enticing sides of homemade mashed potatoes, sautéed vegetables, capperata and natural roasting juices. The menu offers some wonderful surprises, especially at dessert. Panna cotta is served deconstructed and studded with raspberries, crumbled sponge and white chocolate raspberry discs. Tiramisu has been similarly modernised though it still comprises the traditional savoiardi biscuits perfumed with espresso.
