Enjoy an indulgent platter of seasonal oysters, fresh king salmon sashimi, Hokkaido scallops, poached tiger prawns and New Zealand mussels served with a spicy wasabi shoyu dip. Or up the ante by adding a serving of wild-caught Atlantic lobster and Russian sturgeon caviar to your platter.
Other moreish appetisers to whet your appetite include the green papaya salad with dried shrimp tossed in sweet-sour Laotian fermented anchovy sauce, and Australian grass-fed beef rump salad mixed with capsicum, coriander, onion and mint leaves. Alternatively, warm your bellies with a chicken essence broth with fish maw, bamboo shoots and coriander, or a lobster tom yam clear soup.
Several dishes stand out from the mains selection. Savour a sizzling hot plate of richly marbled Kurobuta pork loin sautéed with black pepper, garlic, spring onions and chillies. Then sample a memorable pan-seared red drum fish paired with tangy tamarind sauce and sweet poached pear. Equally delectable is the grilled charred squid with classic chilli lime sauce, and roasted French corn-fed chicken marinated in lemongrass, and Vietnamese black pepper beef.
Recommended greens include the grilled portobello mushroom steak and asparagus dressed in cream sauce, and a pot of stewed mushrooms, bamboo pith and bok choy. End with a dessert of Vietnamese coffee-flavoured crème brulee or traditional Thai sticky rice with mango and sweet coconut milk.
