Authentic yet inventive Cantonese cuisine is what this restaurant at Resorts World Sentosa serves. Dining here is an elaborate affair, with artfully-styled dishes created by celebrity chef Susur Lee.
Start with sashimi-grade abalone and Hokkaido scallop with a dash of yuzu sesame sauce, followed by cheese-filled crab croquettes with lemon, ume and tempura shiso leaf.
The menu is first rate, with offerings like Lee’s signature Fortune Chicken wrapped in lotus leaf. Baked with wild mushrooms, rice wine, chestnuts and coriander, the chicken is juicy and fragrant. Then savour a hot stone pot of sizzling Australian beef tenderloin seasoned with ginger and spring onion, or Kurobuta pork loin in teriyaki sauce.
Desserts are light and refreshing. Try the aloe vera with ginseng and Chinese snow pear, or the longan sherbet with luo han (monk fruit). Private dining rooms that seat up to 12 are available.
