At first sight, there is plenty to like about this beautifully appointed restaurant located in the Asian Civilisations Museum, beside the Singapore River.
Think high ceilings, floor-to-ceiling glass windows, fresh flowers and sleek furniture, all of which work together to create a chic, salubrious settingflooded with natural light.
But more than just a view and a swish dining room, EMPRESS also serves up a delicious modern Chinese cuisine that hits all the right notes. There is a dim sum selection available for both lunch and dinner, featuring delicately crafted morsels such as scallop siew mai, steamed lobster and spinach dumplings and excellent steamed molten egg custard buns. From the mains selection, we highly recommend the golden crisp deep-fried tofu generously dusted with salted egg yolk for a hit of umami; the crispy sweet and sour pork laced with aged vinegar and tossed with juicy lychees; and the crunchy stir-fried French beans with minced pork. Its selection of roasted meats is tempting too.
Instead of regular steamed rice, be sure to order the traditional claypot rice featuring long grain rice topped with mixed Chinese sausages, a fragrant delicious indulgence you will not regret.
