Start the meal with the likes of marinated pig’s ears with pickled vegetables, deep-fried soft shell crabs, and crispy whitebait dusted with salt and piquant spices. Soups such as double-boiled sea whelk soup with chicken and morel mushroom, and double-boiled bird’s nest with bamboo pith are a highlight here. The range of Cantonese-style roasted meats is also irresistible—think crisp-skinned pork belly, whole suckling pigs and Peking ducks with burnished skin. Seafood lovers, meanwhile, get a great selection of fresh crustaceans cooked to their liking, be it braised, steamed, deep-fried, or lightly sautéed with the restaurant’s splendid house sauces.

Other specialities include the Kurobuta pork chop with teriyaki sauce, sautéed beef cube in black pepper sauce, and baked crab shell stuffed with a velvety seafood paste. Even staples like rice and noodles get an upgrade here. Fragrant fried rice gets a lashing of abalone sauce before it is wrapped in a lotus leaf, while braised ee-fu noodles are served with fresh prawns and slicked with black truffle oil.

There is a small selection of classic Chinese desserts such as double-boiled bird’s nest served with a choice of almond cream or rock sugar, double-boiled hashima (frog’s glands) with almond cream, herbal jelly with syrup, and mango purée with sago and pomelo.
