Nestled in a quiet corner of Shangri-La’s Rasa Sentosa Resort and Spa, 8 Noodles serves quality local dishes in a dining room designed after atypical Singapore coffee shop. Despite the restaurant’s name, one of the stars of the menu is crabmeat fried rice. Generous portions of crab and shrimp are tossed in rice, all of which are suffused with wok hei, whichtranslates to mean ‘breath of the wok’. This fragrant smokiness imbues other dishes like char kway teow— the posh rendition here is gussied withprawns, scallops and plenty of fresh bean sprouts. The Cantonese-style roasted meats here are also stellar, especially the succulent roasted duck and crisp-skinned pork belly. Of course, the noodle dishes deserve special mention, in particular, the garoupa udon served ina robust herbal broth with ingredients such as Chinese angelica root, red dates and wolfberries.
