Squirrelled away on the second level of Park Hotel Clarke Quay, Cocobolo Poolside Bar + Grill is an oasis of calm amidst the city’s bustle. With a lovely view of Clarke Quay, this poolside gem is a wonderful place to hide away and watch the sunset. Gaze out at the tableau below while savouring a varied selection of Western and local favourites. These include seafood char kway teow, a generous mound of smooth wok-fried rice noodles studded with fresh seafood, vegetables and sliced Chinese sausages; and a scrumptious beef burger comprising a juicy Angus beef patty topped with crispy bacon, cheese and caramelised onions tucked between buttery brioche buns.
On Friday and Saturday evenings, the restaurant serves a hearty Western barbecue buffet featuring the likes of New Zealand Angus striploin with red wine sauce, Australian rack of lamb spiked with dijon mustard, and US baby back ribs in spicy chipotle sauce. All these can be enjoyed straight from the buffet selection or grilled to order. Apart from the premium meats on offer, there is also a mouthwatering selection of grilled seafood such as Cajun-spiced tiger prawns, arrow squid with turmeric, and grilled mackerel wrapped in banana leaf.
